We are having friends over on Friday and I am not feeling anything. Not sure why. I love to cook! No fish though.

for me its tough because i hate cooking multiple meals because ken's a vegetarian.
sunday we are having friends over and im either doing lasagna or ziti with chicken parm. i like the opportunity to make meat for people when its more than belle and i eating it.
for easter i've decided im roasting a chicken (thats easy and yummy) and you can make fancier sides
you should make pepper steak im DYING for pepper steak. but my daughter HATES peppers so i'd make this whole thing for myself and be forced to eat it all

Depends on the company. Lately I've been doing Italian - meatballs and sauce with homemade Caesar salad dressing because our friends love this and it's easy, plus the kids will eat it.
Before kids I always tried to do something new, but that would let me hang out with them instead of being in the kitchen the whole time. My favorite was Tyler Florence's Dad's meatloaf with potato gratin.
Grilled chicken or chicken cutlets (depends on my mood) with roasted peppers, sauteed spinach and fresh mozz on top. They're easy because you can cook the chicken and spinach the day before, then just assemble and pop in the oven.
We've also done tacos which is easy - again, prep work done night before, minimal stuff needs to be done day of.
Anything in the crock pot always works - I love doing ropa vieja (pulled pork gets to be lame after a while, especially following football season, IMO).

You could also go casual--it's fri night, after all. If you have a crockpot or will be home all day you could do a pulled pork with rolls and coleslaw, etc. and a homemade mac and cheese.
A small ham? It's so easy to just put in a roasting pan & cook.
One of my favorites is Pioneer Woman's Stuffed Shells. They make so much too, so it's always a go-to if I want leftovers.
Tacos? I put chicken breasts, salsa, taco seasoning & a little bit of water in the crockpot, cook on low for 6-8 hours and then shred up. Everyone can make their own.
