I'm looking for some ideas for a brunch we're hosting this weekend. It looks like we'll be about 12 adults. I know I want to serve bagels and some type of egg dish, preferably one that can be prepped ahead of time and one that doesn't include bread in it. Any great recipes? Thoughts as to what else I can add besides fruit? A good salad and muffins/coffee cake too? Thank you!
Re: brunch menu help
Make Ahead Scrambled Eggs from melbride's blog. I haven't made them but it sounds perfect.
I'd do bagels, lox (if you like it), cream cheese, the egg dish above, hash browns, fruit salad, muffins/pastries (I'd just buy these since I don't really like baking), bacon and sausage.
These mini egg muffins could be made ahead & you can do different veges in different batches.

I hosted a brunch last weekend and I served:
Sort of as apps:
-mini bagels and cream cheese
-cheese and crackers/grapes
For the meal:
-bacon/cheese strata--so good and is assembled the night before and cooked the morning of but it has bread in it
-fruit salad
-dried cherry scones
-hashbrown type potatoes
-choc covered strawberries
I was also going to do a yogurt parfait with granola and fruit but decided to skip it at the last minute.
Check out this blueberry muffin recipe--it is always a hit:

Yes, we loved the make ahead eggs...they are so easy and delicious!
I have an easy frittata recipe too - Frittata
this is another option - Baked Eggs with Cheddar & Potatoes

This sounds awesome. What about a simple quiche? I LOVE a ham and cheese or bacon quiche. It also takes care of the pastry idea.
