haven't posted here in a while, but i do read posts regularly!
when baking with unsweetened coconut, do you use as is or soak it in water first? does it just depend on the recipe?
i've made some muffins with it already, and i did not soak it. they turned out fine, but the texture of the coconut is obviously very different from the sweetened kind. thanks for any tips!
