Any ideas?  I've been searching online and have only come up with this:

But some of my guests don't like coconut.  I'm open to almost anything, as long as it will be a crowd pleaser.

You could just not add coconut?

why does it have to be made in a crockpot?  dessert came be made ahead of time and it shouldnt take 6 hours

Slow Cooker Rice Pudding
