Morrisseys...

I made your coconut shrimp curry last night and DH LOVED it but do you use sweetened or unsweetened cocunut milk?  I grabbed sweetened coconut milk at the store and didn't pay it any mind until I got home. Could I possibly substitute milk or half and half in the place of it next time (b/c there will definitely be a next time) or will it mess with the consistency?  TIA

  • I'm glad you liked it! I usually get the light coconut milk from Taste of Thai or the ethnic aisle at the grocery store. I don't believe it's sweetened like the stuff that would come in the carton in the refrigerated section, if that makes sense. Because the coconut milk is such a thick consistency, I honestly don't know how milk would turn out...but I would think something higher in fat would work best as a substitute - so I would go with a half and half over milk certainly...hope that helps!

  • Thanks so much...I got the coconut milk from the ethnic aisle too and it came in a can.  I only added half the can since it was sweetened and so thick.  I think next time I'll make sure I get the UNsweetened milk or half and half.
