This is bananas. B-a-n-a-n-a-s!

After two dozen muffins, two loaves of banana bread... I still have overripe bananas to use. I forgot to add them to my oatmeal recipe...that's already in the oven and I just realized it.

How long can you have overripe bananas in the refrigerator before you need to toss them? I took them out Sunday night, baked the muffins and bread on Monday...

ETA: I was hoping to use them up tonight, but again, it's 9:30pm and I don't want to stay up all night but I don't want them to go entirely bad and have to toss them. However, maybe it's too late for that... :-(

Unrelated... does anyone else ever get to baking late at night and then think, WTF was I thinking? :-)

  • Peel and freeze them. Use when needed. :-)

They've already been in the freezer and were unthawed Sun-Mon, so they're the super soggy, black bananas. Are they still ok to refreeze? My DH didn't think that'd be ok. Originally I wanted to take the peels off and refreeze in a baggie.

  • Peel, chop, toss in Baggie into freezer. I keep them separate so I always know one banana per bag. Use in baking, oatmeal or smoothies later

bwahahaa...I can so relate to this!

I say toss them!  Don't let bananas drive you...well, you know.

  • I freeze them too. I peel, mash and freeze in ziplocks.
