What should I make for dinner?

I didn't plan a meal for tonight but plans changed.

I have boneless pork chops thawing.

Things I have: goat cheese, half and half, fresh basil (I'd really like to use this one up the most), and a bunch of normal staples like onions and garlic, different grains, beans, etc.

I know I can stuff the pork chops, but any other ideas?

  • You could make some kind of sauce for pasta or another grain using the goat cheese, half and half and basil. Then just sear the chops and serve with the pasta/grain.
  • I do pork chops with a Dijon Chive sauce (have done medallions and pork chops). How abotu doing them with a Basil Cream sauce?

    In trying to think outside that box... you could grind the pork chops in your FP and made pork-basil-goat cheese meatballs to serve with rice or pasta?

    This would actually be a great idea, if we didn't already have 2 forms of meatballs this week lol

    I actually just decided I'm going to do a play on drunken noodles, but with a faux fried rice instead and just make some sort of soy type glaze for the chops. It will only use my basil, but I have plenty of ideas for goat cheese for other meals, obviously. :)
