What to keep on hand for lunches?

I'm used to bringing leftovers for lunch. I've been doing this pretty much the entire time I've worked in order to save money. But starting next week I'll be working from home and I'll have the freedom to make lunch instead of relying on leftovers.

So...what should I keep on hand? Since I meal plan I'm used to only buying what I need for specific recipes.

  • Depends on what you like to eat...I'd keep your favorite salad ingredients for salads, your favorite sandwich ingredients (and bread, obviously)

    cheese for grilled cheese

    fruit

    canned tuna, canned salmon

    It really all depends on what you like! 

  • I would keep on hand stuff to make sandwiches, quesadillas and salads

    Oh I made chicken salad for sandwiches and also to add to my salad this week. It was delish!

    I would continue putting leftovers aside so all you have to do is just heat it up and enjoy @ home.

    or you can torture yourself by putting some stuff in the crockpot overnight so that it is ready to eat by lunch (soups, stews, and lasagna come to mind).

  • Ha! Yes, it does depend on what I like, doesn't it? Stick out tongue

    I'm kind of weird...you'd think the freedom to make whatever I want would be awesome but instead I know I'll be standing in front of the fridge with no idea what to make/eat. That always happens to me the days I'm home sick or working from home. 

    I think I might be better off planning lunches the same way I plan dinners. I love lists so this could be good...and it would be a chance to make things my husband doesn't like to eat. Bonus! 

  • I go home for lunch not work from home, but I keep:

    wraps in case I don't feel like bread

    soups with crackers

    and also have this pinned as well.

    I eat leftovers too, but it kind of depends on what they are.

  • I would probably still do leftovers because I'm lazy like that, lol. I used to work from home one day a week and I'd either eat leftovers or some sort of eggs + toast (or similar).

    I'm not huge on sandwiches unless I have a lot of stuff around (lettuce, tomatoes, good cheese, hot peppers, etc.) but I do like to have grain salads a lot. It might be nice to roast a chicken or buy a rotisserie chicken and just use it for anything from pasta to wraps to quick soups.

    This is me. I rarely make sandwiches because I need a ton of stuff on them to make me happy.


  • I think I would keep a bunch of salad stuff around, especially things like hard-boiled eggs, cheese, and shredded chicken (which could be frozen and would defrost quickly). 

    Or, I would make up a big bowl of some sort of grain salad early in the week to eat for lunches all week.  

    Or, leftovers.

  • I pretty much always eat lunch at home.  I always have soup, lunch meat & tortillas/pita/wraps/bread for sandwiches,lettuce/veggies for a green salad.

    I also make egg salad sandwiches, poached chicken for salads/wraps/sandwiches, mini pizzas on a pita/bagel, pasta salad, frozen veggie/chicken burgers and sweet potato fries, loaded baked potato, BLT sandwiches, grilled cheese.

    I also freeze chili, soup & lasagna in small portions for lunch. I do eat leftovers from dinner sometimes too. 

    Also, I like salami, cheese, crackers, veggies with hummus/dip.

  • I have quesdillas often and add whatever veggies I have in the fridge, leftover chopped meat, etc.

    I always have cheese on hand and have little lunch "picnics" - cheese (a couple different kinds, like a brie and then a manchego or something harder, crackers, salami or turkey, and fruit.

    bagels are handy too because you can do anything from cream cheese (sometimes I add chopped green onion or other veggies to the top) to hummus or egg salad.

    hard-boiled eggs too!

  • I generally tend to have greek yogurt, cheese, crackers, fruit and hard boiled eggs ready and waiting.
  • DH and I both work from home a couple of days per week, and we mainly eat leftovers from dinner, sandwiches with fruit/veggies & hummus/chips & salsa. Occasionally I'll make an egg scramble with veggies and cheese.
  • I telework occasionally, and when I do, I usually repurpose other leftovers, heavy on the grilled sandwiches and quesadillas, or make salads that wouldn't do well packed the night before, carried to work and stuck in the fridge for several hours.

  • I am a SAHM so we eat at home for lunch often. Pitas, wraps, english muffin pizzas, salads, soups, sandwiches and of course leftovers.

    I always have soups in the freezer in smaller portions so we can have some on hand whenever we want.

    I would focus on planning on repurposing: cook chicken once and have a wrap one day, a couple salads, a pita pizza.... BLT, BLT wedge with soup, brunch one week..
