Paninis

Okay, I'm looking for your best panini recipe...I'm working out next week's menu.

  • I love a million kinds of panini - but right now this is the one I am craving...

    Marinate a portabello mushroom in balsamic vinagrette for about 15 minutes.

    Put it on the grill (foreman) or grill it up outside or on the stovetop.  Grill up some red onion slices too.

    Once they are cooked, put them on the bread, add a slice of fresh mozzarella, some roasted red pepper slices, and some fresh basil.  Put some more balsamic on the bread if you want.  Put it in the pannini maker (or back in my foreman).

    Yum.  Yum. Yum.

  • Ok Kristin seriously... that made my mouth water! I love marinated portobella's! And ooey gooey melted mozzarella... YUM!!!!

    My mom and I do chicked- sometimes left over breast, or I do chicken or turkey sliced lunchmeat when in a hurry, with fresh mozz, basil and tomato! I do a horshradish seasoned mayo on mine. Very YUMMY!

  • I could go for a panini from Panera. Yum. Never tried to make my own...
  • I like balsamic, fresh mozzarella and tomato.... plain but sooo yummy!
