Edited...because I've completely changed my mind about pretty much everything...
Sunday: wild rice soup, toasted ham and cheese sandwiches
Monday: canned beef over mashed potatoes, steamed broccoli
Tuesday: out for V-day, DH made the reservations and the restaurant is a secret
Wednesday: red beans and rice with spicy sausage
Thursday: my MIL arrives and I plan to make fish tacos and grilled zucchini sticks for her
Friday: I have a work event that I'm doing (Chinese theme so we'll have Chinese foods...fried and steamed rice, sushi, seared ahi tuna, mini egg rolls, pork tenderloin with a soy garlic lime sauce, fried donuts, etc.) and DH's team will be hosting another tournament so he'll eat at work. My MIL is coming to my reception after DH's (3pm) game.

OMG! If this is the recipe from pinterest...you're going to love it! I made it about 2 weeks ago and it was amazing!

Fri: I'm going to keep in simple and just make the Rissois (Portuguese Shrimp cakes) that I have in the freezer from the last batch I made along with some rice.
Tonight- Spicy parmesan shrimp skillet, salad
Tomorrow- slow cooked london broil with potatoes and carrots
Monday- stacked veggie enchiladas
Tuesday- heart shaped ravioli (if I can find them), if not regular ravioli, salad
Wednesday- baked potato soup, salad
Thursday- lighter general tsos chicken, rice, mini baked egg rolls, sauteed bell peppers
Friday- TBD.. possibly pizza?
Saturday- out for Valentines Day

My husband actually did our meal plan this week - I was on my way home from DD's swimming lessons this morning and he called me to ask if I had the grocery list done so we could go shopping once I got home. I hadn't started it at the point, so I told him to think of a few things, well he thought of something for each night. There's not a ton of variety, but it'll work for this week I guess...
Saturday - Taco Cupcakes (found on pinterest and didn't make them last week)
Sunday Lunch - cheeseburger loaf, Dinner - Beef Stew
Monday - Sloppy Joes
Tuesday - Chili
Wednesday - Green bean/tator tot casserole
Thursday - Soup & sandwiches
Friday - Brats & hotdogs (for DD).
