Our tech team has launched updates to The Nest today. Can I leave naked potatoes out overnight?

    I think they're fine if you leave them in a bowl of cold water in the fridge.  I think they'll brown if you just leave them out completely.

    If they're raw you can keep them submerged in cold water in the fridge, whole or diced.  If they're already cooked, I'd give them just a drizzle of olive or canola oil and stir to keep them from sticking, and refrigerate.

    They are naked and still in the peel. Tomorrow I am going to add evoo parsley etc to them. So on their skins choked on the counter is okay?

    If they're cooked, they need to go in the fridge or you'll risk botulism.

    I don't think I understand what you mean by, "naked," if they're still in the peel.  Are they cooked?  Raw but cut-up?  Whole and raw??
