Can I leave naked potatoes out overnight?

I'm using them in potato salad tomorrow.

Re: Can I leave naked potatoes out overnight?

  • I think they're fine if you leave them in a bowl of cold water in the fridge.  I think they'll brown if you just leave them out completely.
  • If they're raw you can keep them submerged in cold water in the fridge, whole or diced.  If they're already cooked, I'd give them just a drizzle of olive or canola oil and stir to keep them from sticking, and refrigerate.

  • They are naked and still in the peel. Tomorrow I am going to add evoo parsley etc to them. So on their skins choked on the counter is okay?

  • If they're cooked, they need to go in the fridge or you'll risk botulism.

I don't think I understand what you mean by, "naked," if they're still in the peel.  Are they cooked?  Raw but cut-up?  Whole and raw??

  • This might seem like a stupid question, but I can't figure it out and google doesn't have an answer.  What are naked potatoes?
