Febbride, I'd do something like grilled zucchini, or even grilled tomatoes. Then perhaps a fruit salad of some sort?

M--Shrimp stir fry
T--Italain Beef Sandwiches with peppers, onions and mushrooms, tomato and cucumber salad
W--Chicken roasted with potatoes and carrots
Th--Tangy slow cooker pork chops, couscous, broccoli
F--Chicken enchiladas verdes, Mexican rice, guac
S--out
Maybe black beans? Or chips and guacamole?

Monday - Asian Lettuce Wraps
Tuesday - Valentine's at Home: Grilled Steaks, Mashed Potatoes and a Salad
Wednesday - I have class, DH on his own
Thursday - Thaw out Cheesy Chicken Chili (Soup)
Friday - PW Sloppy Joes
Saturday - Possibly out with my Parents
Sun: beef & butternut squash stew
Mon: Mexican Pizza, salad, cupcakes for DH's birthday
Tue: pork chops, mashed potatoes, steamed veggies (not sure what's on sale...)
Wed: leftover stew
Thu: Jambalaya
Fri: leftovers
Good ideas. I ended up doing chicken tortellinis with an olive oil sauce infused with garlic, basil, oregano and fennel with a little balsamic vinegar, tiny bit of lemon and lime juice, salt and pepper, thickened with a little flour and sprinkled with Parmesan. Sounds weird, but it was good.
ETA: oh, and a little chicken stock and white wine. Like I said, weird, but good.

M- Potato and ham soup, fruit salad
T- Leftovers for me. DH has class.
W- Southwest chicken chili mac

F- Date night, out somewhere
S- DH and I out for date night

T- undetermined. It's our last night together for a couple weeks and Valentine's Day, so I'm looking for something good to make..
