Re: What's on the menu for the week?

  • No idea what we are having for the rest of the week, but tonight is Southwestern Stuffed Peppers (from this month's Real Simple) and Neopolitan Valentine heart-shaped cakes (from http://www.sixsistersstuff.com/2012/01/valentines-day-neapolitan-cupcakes.html?m=1), which I got from someone on Nest Book Club page.  Yum.
  • Is there a good side dish for stuffed peppers?  They seem pretty self-contained (they have beef, rice, green chiles, cheese and corn in them), but the plate seems pretty empty.  Any suggestions?
  • Febbride, I'd do something like grilled zucchini, or even grilled tomatoes. Then perhaps a fruit salad of some sort?

     Our menu:

    M--Shrimp stir fry

T--Italain Beef Sandwiches with peppers, onions and mushrooms, tomato and cucumber salad

W--Chicken roasted with potatoes and carrots

Th--Tangy slow cooker pork chops, couscous, broccoli

F--Chicken enchiladas verdes, Mexican rice, guac

    S--out

Maybe black beans?  Or chips and guacamole?

Good ideas. I ended up doing chicken tortellinis with an olive oil sauce infused with garlic, basil, oregano and fennel with a little balsamic vinegar, tiny bit of lemon and lime juice, salt and pepper, thickened with a little flour and sprinkled with Parmesan.  Sounds weird, but it was good.

ETA:  oh, and a little chicken stock and white wine.  Like I said, weird, but good.
