So let me put this out there: I really don't like salad unless it's totally unhealthy and covered with unhealthy dressing tons of cheese and you know generally making a healthy thing unhealthy....
I'm wondering if any of you have any salad recipes that you enjoy...I can't find many recipes, but I want to start trying to have maybe atleast one salad a day...(probably with dinner) since my husband likes them.
Any suggestions would be great!

Just did one tonight that was enjoyed by all.
1 can beans of choice, rinsed and drained
1 red bell pepper, diced
1/2 green bell pepper, diced
1-2 green onions, chopped
1-2 small cucumbers, seeded, diced
1 carrot, shredded
1 cup parsley, corsely chopped
1 cup cherry tomatoes
1 small clove of garlic, made into paste with salt
3 Tbls fresh lemon juice
2-3 Tbls balsamic vinegar
3-5 Tbls olive oil
Mix together dressing, toss in beans, let sit together while prepping the vegetables. Combine vegetables with beans. Toss to coat everything. Taste. Add more lemon, oil, vinegar as needed. Salt and pepper to taste.

wow, i'm always so amazed when people say they don't like salad. i (not dh!) eat it with dinner every night.
here's a few of my favorites:
tomato salad: onion, GOOD RIPE tomatoes, salt, pepper, oil, vinegar, sugar, parsley. i think it goes well with beef dishes or cheese sandwiches
cucumber salad: peel and slice cucumber very thin, add yogurt dressing, salt, parsley, thyme, pepper and a little bit of water. i love it with every meal that has potatoes in any form
cesar salad: organic romaine hearts, tomato, cesar dressing, kraft mozzarella cheese shredded, cocktail tomatoes on top
mixed salad: iceberg, tomatoes, cucumber, red and yellow bell pepper, radish, onion if you like. i toss stuff in i find in my fridge. for example tuna or turkey breast or ham or cheese...you get the idea
and so many more. enjoy!
mmmm I could live on salads....um, and pizza. Anyway here are some of our favorites.
spinach, blueberries, red onions, feta and pine nuts. pomegranate vinaigrette. would go good with grilled chicken or shrimp on top.
romaine (or other mixed greens), topped with a mix of diced tomato, onion, black beans, corn, blanched green beans, avocado, lime juice and fresh cilantro and grilled chicken. BBQ ranch dressing.
spring greens, topped with roasted red peppers, roasted portabello mushroom slices, thinly sliced teryki steak, feta and pine nuts. parm ranch dressing.
romaine, dried cranberries, diced green apple, crumbled cheddar, walnuts, grilled chicken. honey dijon vinaigrette.
spring greens, apple, pear, red grapes, sharp cheddar, toasted pecans. apple cider vinaigrette.
grilled romaine, grilled chicken, red grapes, shaved asiago or parm, ceaser or parm ranch dressing.
find some resturant ones that sound good to you and recreate them at home. try making various vinaigrettes and using those, as they are alittle better for you than creamy dressings.
Do you like salsa? I find that a good aount of salsa on a salad really reduces the need for much ranch dressing (by like 75%). I do the typical lettuce, tomato, cucumber, (maybe corn nibblits), red onion, and some baked tortilla chips for crunch. Less is more with cheese, you really only need a touch to get the flavor -especialy if you you use a high quailty, high flavor cheddar (or tht like). Salsa is WONDERFUL on an salad.
I also use this salad and instead of salsa, add a cup of hot chili to it for dinner. It's the best! It seems a little weird to add hot chili onto cold salad, but trust me if you use a helthy chili with lots of beans, and a little Ranch to the salad part - heaven and oh so filling. DH skips the Ranch and just adds a bit of low-fat sour cream to the chili - again, less is more, you don't need much to get the flavor.
