I love entertaining and we often have people over and I enjoy cooking/prepping. However, I have a party happening next weekend that I am already stressed about it because I can't think what to cook. and for some odd reason I feel like it needs to be impressive.
last time this group (husband's boss and couple of coworkers and significant others) were over I made salmon encroute with some herb rice and vegetables, lasagna and some soup and salad..they loved it and were raving about it and kept telling my husband that they want come back. now they are and for the life of me I can't think what to cook that would look/taste as good as the first time.
Please help with ideas/recipes. Thank you so much in advance!
Re: entertaining next weekend, need help with recipe ideas
My first thought was a stuffed chicken breast- spinach, feta, a little mayo to bind, then wrap in bacon; you could serve with roasted root vegetables. I thought of a tuscan white bean (Ina Garten it has carrots and fennel too) side but that might be too white on the plate. Acorn squash might be good too, but can be a bit messy or awkward.
Something I was thinking about doing, was a comfort food dinner party. Just something simple and homey- meatloaf, mashed potatoes, green beans and maybe fancying it up or maybe not.
Beef tenderloin steaks with port reduction and blue cheese
Potato gratin with rosemary crust
Salad or other green veggie
Raspberry truffle tart
