anyone have a good chorizo recipe?

I've got about a pound in the fridge to use this week, but I've never cooked with it before. So anyone have a great recipe that calls for chorizo? TIA!

I recently made a hash from chorizo, onions, potatoes, acorn squash, and green chile, topped with fried eggs.  It was so, so good.  I used fresh chorizo, but it would work with cured as well.

QUESO FUNDIDO!

Render down the chorizo in some olive oil (chop it into bite size pieces), then add diced onion and some diced bell peppers (any color), add in a can of rotel tomatoes and cook a few minutes (you can add extra jalapeno also if you like it spicy).  Add a block of grated mozzarella & a few handfuls of cilantro and stir, then broil til bubbly.  Serve it with tortillas, and (optional salsa and sour cream.)

MAN I wish I had some chorizo in the house.
