recipe for sweet potato casserole?
We are having an early thanksgiving lunch at work on friday.yes... it's three weeks early!
But, I love some turkey! I am supposed to bring the sweet potato casserole and I've never made it before and have no clue as to where to start.

I usually wing mine, but here's a recipe that looks good:

Some recipes will tell you to peel and chop your potatoes before you boil them... Please don't waste your time and energy on this!!! Wash them well, then put them in a stock pot with water and boil them until a fork goes into them easily. Take them out and let them cool. At that point you will be able to slide the skin right off and your potatoes will be ready to puree/whip/mash.
This one is delish! I made it last Thanksgiving. I think I got it from Lauren's mom!
Sweet Potato Casserole
3 cups sweet potatoes mashed 1 cup dark brown sugar softly packed 1/4 cup butter 3 eggs 1/2 cup milk 1/2 teaspoon vanilla 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Topping: 1 cup finely chopped pecans 2/4 to 1 cup flaked coconut 1 cup packed brown sugar 1/2 cup flour 1/4 cup butter Preparation:Combine mashed sweet potatoes, brown sugar,1/4 cup butter, eggs, vanilla, salt, cinnamon and nutmeg, blend well. Spoon sweet potato mixture into a buttered baking dish, Mix topping ingredients until crumbly; sprinkle over casserole and bake at 350 for 30 min.
