I'm thinking of starting "no meat Monday" at our house. Not for any particular reason, just cause.
I'm not big into mushrooms, peppers, or onions (although if I food process the heck out of the last two I don't mind them *in* the food). I haven't found very many recipes that are vegetarian that don't have mostly one or all three of those ingredients. Do you have any you can share? Or know of a good website that has them? I also haven't had very good luck replacing meat with tofu, DH doesn't like it, and I don't really either.

Some of my favorite vegetarian foods (sorry no recipes, but you can use these as a start?):
butternut squash
lentils
black beans and rice
pumpkin
zucchini
any kind of nut
whole wheat pasta
pizza with arugula and goat cheese
I made black beans and rice for dinner today. I forgot about lentils, my mom has a few good recipes with those. I'm kinda dumb, I didn't even think of whole-wheat pasta even though I have a ton of it in our pantry, lol.

We do lots of meat free dinners. We're not vegetarians but we only eat local farm raised meats. It helps that my parents raise chickens, turkeys, pigs, rabbits and sheep. We buy bunk meat from them aswell as a side of beef from a local meat market. So it would be very expensive to eat meat everynight.

Last night I made broccoli walnut pasta. You cut up two heads of broccoli and 1/2ish cup of walnuts (finely chopped) drizzle with olive oil and 2-4 garlic cloves bake at 400 until broccoli browns. Meanwhile boil shell noodles (we use whole wheat). When the broccoli and noodles are done combine the two (w/o the water) add 1-2 tablespoons butter and some parm cheese. Salt to taste.

You can easily substitute meat for beans: Black beans, garbanzos, lentils, are all high in fiber and protein. Pine nuts and spinach have protein too, and can be added to any pasta dish, and quinoa can be used for rice dishes.
If you find a recipe that's veg and it calls for mushroom or onions, just swap em for a veg you DO like! Or if you will eat shallots or green onions instead "real" onions, you'll still get the flavor contribution (and health benefits) but without having to eat something you don't like; you could try that.
