How do you think those enchiladas would be with blackbeans instead of chicken?

This has the potential to sound absolutely ridiculous, and I haven't made the enchiladas in question. But when subbing beans for meat, I always think/do black beans for beef and white beans (great northern? Canneloni?) for chicken.

Interesting Okla. I might try that. Someone in the comments suggested making them with chickpeas, which also sounds interesting.

I think they would still be good, but Okla makes a good point I think white beans might be better.

I think the nest ate my last post, but I think even a rough chop of white, black and kidney beans would be good, but I love beans.

I think I just like my food to be the same color of the yummier stuff it's replacing.

 

And I still want some effing french fries.

I think they would be absolutely disgusting.  But I hate all beans, so you're probably asking the wrong person.
