cooks: need a shrimp recipe besides scampi
My shrimp were still frozen last night plus my H decided he didn't want Pasta (or rice) so I *have* to cook this shrimp tonight. I found a shrimp bake recipe on Pinterest that seems pretty easy, but would love some other ideas. In the summer we steam them with beer & old bay but that isn't too kid friendly.

If you cook with any alcohol as long as you cook it long enough, it all steams out.
I made shrimp primavera the other night. Just sauteed up whatever veggies we wanted (zucchini, squash, carrots, asparagus, tomatoes) threw in the shrimp to heat through and tossed it with some pasta. I added a bit of shredded mozzarella & pine nuts at the end.
Baked Shrimp in Tomato Feta Sauce Recipe
Method
1 Preheat oven to 425?F. Heat oil in a large, oven-proof skillet on medium high heat. Add the onions and cook until softened, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds more.
2 Add the tomatoes and bring to a simmer, reduce heat and let simmer for 5-10 minutes, until the juices thicken a bit.
3 Remove from heat. Stir in the herbs, shrimp, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 10-12 minutes.
Serve immediately. Serve with crusty French or Italian loaf bread, pasta, or rice.
Serves 4.
Yum! Coconut Shrimp! I have pinned that for a later date (I don't have any coconut at home).
Oh yeah I know the alcohol cooks out, its the old bay i'm more worried about, lol! I think it might be too spicey for her!

Orzo with Shrimp & Grilled Veggies
Orzo 8 oz, ? box; cook as directed
Toss veggies and marinate:
1 yellow squash, sliced length wise
1 zucchini sliced length wise
1 red, yellow or orange pepper sliced into 2 large flat pieces (cut off top & bottom, then cut in half to make flat)
1 red onion sliced in rings
2 tsp red wine vinegar
3 tsp olive oil
Salt & pepper
Make dressing:
Zest of one lemon
Juice from 2 lemons
Olive oil to taste (1/4-1/3 cup?)
Salt & pepper to taste
Add a little of the dressing to orzo once it is cooked & drained to keep from sticking
Set aside in large serving bowl
1 lb small shrimp, peeled and deveined
Add dressing to coat shrimp and marinate for a few minutes prior to grilling
Grill veggies on indoor grill pan (or outdoor grill) for 3-4 minutes per side
Then cut into bite size pieces; add to orzo
Grill shrimp 2-3 minutes per side & add to Orzo
Toss with remaining dressing
Top with basil, and salt & pepper as needed
Optional: top with pignoli nuts or cheese of choice (mozz or goat recommended)

it's REALLY good. i make it with yellow rice. it's fairly healthy too-especially if you use low fat mayo. i don't usually give trevor any since it's spicy but i've also made some for him without the chipotle and just dipped it in mayo and panko and cooked it separately, make some plain corn for him. not too much extra work.
