What would you serve as a side?
I'm so bad at coming up with side dishes. This is our menu for the next week-ish, what would you serve as a side?
Chicken flatbread (has alfredo sauce, chicken, and tomatoes)
Braised chicken thighs
Enchiladas
Chicken pot pie
Pasta salad (a cold pasta salad with corn)
Chicken rice casserole (lots of veggies and cheese)
Unstuffed shells (sounds like a lasagna with different noodles)
Honey sesame chicken
Pot roast
I know...we eat a lot of chicken lol.
Re: What would you serve as a side?
With enchiladas I usually serve rice or black beans, and chips with either salsa or guac.
For the unstuffed shells I would go with some crusty bread and a salad.
Pot roast I normally serve with mashed potatoes and maybe broccoli or green beans.
Is pasta salad for a main dish? If so I might make a fancy grilled cheese to go with it.
For most of the week, I'd roast either a couple heads of broccoli or a large bunch of asparagus and then just keep the leftovers in the fridge. Those are my two go-to roasted veggies and go with everything.
For pot roast & chicken pot pie, I tend to load those with veggies and treat them as one bowl meals so i wouldn't have a side at all.
For enchiladas, I'd do pinto/refried beans and either quinoa tossed with pico or chips & guac.
For the honey sesame chicken night, I'd probably do green beans roasted with a dash of sesame oil, soy sauce, garlic, and some orange zest/juice.
