How to make chicken soup today?

I don't have a leftover chicken or anything.  I'll be going to shop rite in a few.  I want to make homemade chicken soup for my husband tonight.  Poor guy is sick and is the best man in a wedding tomorrow.  :(

  • You can either get a pre-roasted chicken and use that and store bought broth and put in veggies and seasoning OR I have often bought either a breast with or without the bone (bone adds flavor) and browned that in the pot, then added the broth and veggies and cooked it that way. 

    Seasoning (bay leaves, parsley, pepper, salt, thyme or any others you like)

    Veggies (diced tomatoes, celery, carrots or again anything you like)

    Add noodles or rice

  • My shortcut way is to simmer diced veggies (carrots, onion, potatoes & little spinach & diced tomato) in store-bought chicken stock. Cook chicken cutlet and/or thighs in a pan, then dice & add to the soup. Then add your noodles.

  • Ugh, our trip to Shop Rite never happened.  Princess didn't want to get in the car.  She swung at me so she went in the corner and then to bed.  No store for us today!  I think I'll order some Wonton soup for later to be delivered. 

    Anything I can do with frozen chicken thighs and chicken breast tenders?  Would they un-freeze in a pot of boiling water?

    I would stick the tenders in the crockpot with maybe 6-8 cups liquid total (between chicken broth, stock & water) throw in some carrots, onion and celery chopped up, maybe some lemon juice and some parsley and salt & pepper also and just let that hang out on low if you have 8 hours, high if you want it done sooner. I am sure if he is really sick he cant taste much and will appreciate the warm broth

    I also used this recipe and it comes out great, I am sure frozen chicken would be fine it just needs to cook longer
