Can recommend some meatless meals that don't include...
I think I am going to aim for 1 day of the week to be a non-meat meal. The only caveat is that DH doesn't like beans (I do), and it can't be overloaded with pasta since I am pre-diabetic.
I appreciate any suggestions!

I love this recipe - it has chicken in it, but I think it would be just as good with out the chicken.

I'm a pretty novice cook so I make the recipe a little faster by not roasting the pablanos I just soften them in a pan- and since pablanos are really hard for me to find, sometimes I substitute with what ever peppers I feel like when I'm making it.
I also tend to leave out the bacon part. I'm sure it's better with the bacon and the drippings, but I just like to make easy things that don't take a lot of time and effort. Plus, I wanted it to be healthier.
I also like to substitute Feta for the Parmesean, just because of personal preference.
If you don't already know about Dreamfield pasta, you should try a box and consider substituting it for whatever you're eating right now. It's a low carb pasta that tastes just like the real thing. I started eating it when I was pregnant (I had GD) and to this day, it's all we keep in the house. My husband (who also doesn't like beans!) even loves it and he's a serious pasta eater.
