I am not really a baker at all, but am attempting to make my daughter's 3rd birthday cake this weekend. For those of you familiar with Ina's recipe (

The party pony pan says to use one two layer cake mix. If yes, I have a couple more questions. What is good cocoa powder? I have tollhouse. I am assuming this is not "good", but would it work ok? She also calls for two x-large eggs. I only have large. Would those work? Sorry for all the questions.

It's the equivalent of a two layer cake mix, so yes.
You are fine with the cocoa powder you have. Obviously if one had access to superior ingredients, a cake would come out better using them. But her recipe is nearly identical to Hershey's Perfectly Chocolate Cake, which calls for hershey's cocoa powder. I doubt Ina would consider that "good" cocoa powder. She's just being uppity.
Two large eggs will be fine.

This is the best cake! I think it should work fine in the pan you are using. Your cocoa powder is fine, if you want to go a little fancier I would recommend Ghiradelli Cocoa Powder, Scharfenberger or Green and Black all have a little bit more depth of flavor. I also use this chocolate sour cream frosting, which might be a little more kid friendly:

Thanks. I am actually using the Wilton buttercream frosting you can buy at the store in a can. I hope that's ok. I thought it was what I needed to do the horses hair, etc. I hope it tastes good.
If you are going to do decoration like that with the frosting, definitely go with the Wilton. The other won't be the right consistency. I've been happy with all of the Wilton products I have used. I think I have also purchased the frosting. Good Luck!
