ISO Mexican/Spanish rice recipe
I've decided to (finally) try crockpot salsa chicken tacos. Does anyone have a good rice recipe for a side?

I'm not a regular on this board so I hope no one minds me posting! My family has always (at least 4 generations) used the same recipe and it's pretty simple.
1 cup long grain white rice, 1 cup tomato sauce, 1 cup water, 1-2 cloves minced garlic, 1/2 a diced onion
Put a little bit of oil in a sauce pan then add the rice, garlic and onion. Slightly toast the rice then Add the tomato sauce and water (if your rice calls for more liquid, add water to make up). Bring to a boil, cover and reduce to a simmer and cook for 20 minutes. Make sure you don't take the lid off or stir while it's cooking.
I like to use chicken broth in place of the water but no one else in my family does.
