Good Quinoa recipe to start with?

DH and I have never had Quinoa, but I want to try it.  I'm looking for your favorite recipes using Quinoa (with meat, or without is fine).

  • Parmesan Quinoa

    I served it with Pineapple Teriyaki Salmon.  It was a fantastic meal, and the first time we had quinoa.

  • This is my favorite - It is from a healthy cooking coobook so you can make it as is but I typically use a little more oil to fry in and usually add a touch of sugar to the fritter batter to caramelize things better.  I have definitely omitted the flaxseed if I didn't have it on hand and have also subbed corn in for carrots which was good too.

    Quinoa, Rice and Carrot Fritters

    Ingredients:
    2 c veg. broth (or other liquid)
    1/2 c quinoa, rinsed very very well and drained
    1/2 c long grain rice (white is best for this formula, if you want to
    use brown, precook it some since the cooking times will vary from white)
    1 tbsp canola oil (can use more or less as needed)
    1 onion
    2 carrots shredded
    2 large eggs beaten
    3 tbsp all-purpose flour
    2 tbsp ground flax seeds (freshly ground is best)
    1/2 tsp salt
    1/2 tsp pepper

    Bring broth to a boil in a medium sauce pan. Add the quinoa and white
    rice. Reduce heat and simmer covered for 15 minutes. Uncover and simmer
    until all the liquid is absorbed, 5 minutes more. Heat some of the oil in
    a skillet, add onion, saute until translucent 3-5 minutes. Combine the
    carrots, eggs, flour, flax seeds, salt and pepper in a medium bowl.
    Add the cooked quinoa mixture and the onion and mix well. Heat
    remaining oil in a nonstick pan, drop batter using 1/4 C. measures and
    flatten. Cook until golden, 3 in on each side, more or less.

  • This Black Bean Quinoa Salad with Tomatillo Salsa would be a great introduction to quinoa, because the flavors are already familiar.  Plus, you know, it's delicious.

  • I'm on my phone, so no link, but sparkpeople.com has an awesome quinoa recipe with spinach & feta. Super easy & delicious.

  • I usually saute a leak, diced carrots, garlic and mushrooms, remove that from the pan, cook the quinoa with chicken stock using the proportions on the box, and then combine the veggies at the end. Blend in some fresh grated parmesean, and top with a good olive oil and sea salt. It's easy and yummy.
