anyone make chicken stock w/ rotisserie chicken carcass?
does it come out well? i use one like every week & makes sense to use it for another use and freeze the stock. was thinking just add carrot, celery, onion bay leaf, cover w/ water and simmer for awhile?

i haven't used storebought chicken, but i make stock with the bones of roast chicken all the time. i throw the bones in a crockpot with just enoigh water to cover it, and let it simmer overnight. if i'm just roasting a couple breasts, then i freeze the bones until i have enough for a large pot.

I just boil the carcass with nothing else. Because I seperate and freeze some of it.
With what I do decide to use vs freezes, I add carrots, celery, onion, garlic, bay leaf and sometimes potato depending on what I am making, chicken veggie or chicken noodle.
