Sorry, I wasn't around over the weekend so just saw this! When are you going? I absolutely adore all the James Thomson Restaurants (The Witchery, The Tower Restaurant and Rhubarb at Prestonfield House). They are all pricey, but you could do pre-theatre or lunch at any of them. Rhubarb is easily my favourite of them and they do a 3-course dinner for ?30 which is well worth it for ambiance alone.
I think it's really fun to just walk from the castle down to Holyrood Palace. The Royal Mile is super pretty and it's fun (though touristy, but I love touristy).
The favourite place for a drink is The Dome which is on George Street. There are a ton of bars and restaurants along that street, it's known for being pretty pricey but The Dome is well worth it. Sadly, they now run a ton of buses down the street (since Princes Street is closed for the tram works for like 1000 years now) which makes it much less lovely but it's still a pretty part. There's a pedestrian-only street between Princes and George - Rose Street, that has tons of Scottish pubs on it if you're into that. My husband is partial to the Abbotsford.
If you like seafood, Mussel Inn is on Rose Street and is really yummy. Upstairs from the Abbotsford, they have a little restaurant (and serve bar food downstairs which is really yummy too) - I highly recommend this place for traditional Scottish food.

Thanks for the tips Pitt! We are headed there tomorrow morning, looking forward to it. I will keep an eye out for the restaurants you recommended. I've already heard good things about The Witchery, so we'll probably check that out.
