Lost the recipe I used to use - its been a few years since I made it
How do you prepare/cook London broil - and will it be soft enough for a 15mos old or should I have a backup for her (she is a good eater but does have trouble with things like quesadillas which I thought were soft enough...)

What size crockpot do you use? I have a 6qt and it's been very hit or miss with recipes

Yup- I use my 6 qt.
When I make small recipes I put them in a covered oven safe dish and stick the dish inside the crockpot. It works perfectly.
I pinned this about 20 minutes ago and it's already been repinned 10 times!
