My husband's favorite meatloaf recipe that I make includes the usual ground beef, egg, plain breadcrumbs, and worcestershire sauce. Then I add half a can of campbell's condensed tomato soup as well--and usually more breadcrumbs until I get the right consistency. If I have enough, I throw in french fried onions as well (this is not exactly a healthy recipe--thus the fact my husband loves it), and this past occasion (Valentines Day) I threw in a hand full of cheddar cheese too.
I cook it at 400 for an hour, checking at 45 minutes to make sure the top isn't burning and whether or not it's finished. When it seems done, I spread the other half of the tomato soup on top and then sprinkle liberally with french fried onions. Put it back in the oven until the soup is warmed up.
Not healthy, but YUM. You might like it or you might hate it!
Mine is listed in my blog. My husband hated meatloaf until he had this one. It has veggies in it so it isnt totally bad for you! lol
