easy/quick recipes w/ frozen vegetables
any ideas? some nights I'm just too tired for all of the chopping!

Sometimes I just prep all my fresh veggies at the beginning of the week to cut down on cooking time each night. I know we use a lot of chopped bell pepper and onion, so the first night I make a big salad and just chop up anything that won't fit and store in tupperware in the fridge to grab throughout the week.
I also keep a variety of frozen veggies on hand though. I can't say I really have recipes for them though, I usually just steam or cook them on the stove top to have as a side. I might throw a little salt & pepper or dab of butter in, but that's about it.
I take the normandy mix (brocolli, carrots & cauliflower, thawed in fridge) & roast them with s&p, granulated garlic, drizzled with evoo & sprinkled with paprika. I like them to start getting browned. (stir occasionally while roasting). I took them to a church potluck & got asked for the recipe!
Goes great with "accidental chicken" -- 5 ingredients & short marinating time

(i used agave nectar instead of the honey & chicken breasts & baked in a pan with a rack while vegetables are roasting. Also, I cook the leftover marinade in a non-stick pan & serve as a sauce.)
