Anyone have a tried and true gumbo recipe? I have issues with recipes using okra (it gets all slimy and gross) any suggestions as to how to remedy that, or recipes without it?

Gumbo Casserole
My H made this and he's not a superbly skilled chef by any means. He subbed the ham for scallops and used a gumbo mix bag of frozen veggies for the okra. We also upped the minced onion, cajun seasoning, and garlic powder (about doubled).
This one is called a casserole, but if I remember right, it still comes out soupy. I'm no expert on cajun cooking, but we loved it.

The okra is usually just there as a thickening agent. If you can get your hands on gumbo file, just use a little bit of that in the pot and it works just as well!

I really like this recipe. I use frozen okra and have never had a problem with it being slimy.
