breakfast menu in veil

We're going next weekend to Colorado (veil specifically) with a  group of 10 couples for a ski weekend. We only know one of the couples. We have been put in charge of breakfast one of the mornings and I'd like to make it nice.

I'm thinking of doing French Toast muffins, and eggs benedict - what else could I do? Or any other ideas? I'd probably get some fruit too etc...

  • For that many people, I'd skip the eggs benedict... poaching that many eggs and keeping the hollandaise from getting weird will be more effort than I'd want to put into breakfast on vacation.  I'd consider doing a strata or a frittata instead, like spinach, feta and sundried tomato.

  • For 10 couples I'd definitely make a couple quiches, maybe a veggies one (I have a really good spinach, artichoke, and roasted red pepper one in my blog), a big fruit salad, and maybe an overnight french toast casserole?

  • I agree with PP--it would be easier to do a strata/quiche/frittata that you could assemble the night before in a big pan and just bake the morning of.

    I think a strata, muffins and fruit is a great breakfast.

    Another idea-You could also do oatmeal with tons of different toppings-raisins, nuts, coconut, choc chips, dried fruit,etc...and then have muffins and fruit as well.

  • I did a eggs benedict bar for 7 girls (+me!) but I baked the eggs in a muffin tin, which worked beautifully.

    It was definitely a LOT of work to prep everything, toast the muffins, make the sauce + cook the eggs all at the last minute...so I would suggest you be prepared ahead of time, or choose something else.

    Other ideas: homemade granola with greek yogurt, honey and fresh fruit (mixture of berries) and I'd serve that with high-protein cookies (like these from PreventionRD), and I LOVE the idea of your french toast muffins or these overnight cinnamon buns are amazing!

    The quiche ideas sound good too, and if you go that route I'd serve it with roast potatoes and some fruit.
