Anyone have recommendations for a good healthy crockpot meal for my lunches this week? I'm not picky at all - just looking for good and low cal.

check out skinnytaste.com. I've made a bunch of recipes from her site, although I'm not positive that I've done any crock pot ones, but all of the ones I have done are very good and usually pretty easy. If you look on the right side of the page, you can click to see just crock pot meals.
And similar to what Liz said, I do pulled pork in the crock pot by covering it with BBQ sauce and cooking on low. It shreds so easily once it's done and then we make bbq pulled pork sandwiches.
My frustration with a lot of a crock pot recipes is that they require so much prep before you put the food in the crock pot. We also make whole chickens, pulled pork, and pot roast quite frequently in the crockpot.
