looking for cake ideas for birthdays

My mom, my DH and my grandfather all have birthday's next month that I need cakes for and I want something new. I am pretty sure I have DH convinced to go with the dark chocolate salted caramel cake from Annies blog but my mom wants something fruity- I think I have made about 8 different lemon cakes for her over the years... and my grandfather, well he likes pecan pie so I make that for him but I still need a cake for the rest of us to celebrate ;) so basically anything I want so- what's your best/ favorite/ most fantastic  birthday cake?

  • Does mom's have to be a cake?  What about a fruit cheesecake or fruit tart?  I have two fantastic fruit tarts in my pies/tarts category in my blog.  I really loved the tropical one.

  • or leveraging the tropical idea from the pp, maybe a coconut cake with a pineapple filling?

    for your grandfather's cake, how about red velvet, cream cheese frosting, with pecans on the sides?

  • My grandmother used to make me strawberry shortcake for every one of my birthdays growing up. Not a "traditional" birthday cake, but it has a special place in my heart (and is fruity...kind of)!

  • we LOVE this Spring Fling cake from a local bakery here.    I also use mandarin orange slices.  YUM!

  • My favorite fruity cake is the following:

    1 box of yellow cake mix

    1/2 cup oil

    1 11oz. can mandarin oranges (with juice)

    4 eggs

    Mix all of the above and bake about 35 minutes @350 (I use a bundt pan)

    For the icing:

    1 8oz container cool whip

    1 pkg instand vanilla powder (just the powder)

    1 15.25oz can crushed pineapple (with juice)

    coconut to taste/preference

    Mix all and decorate top with flaked coconut.
