ISO Strawberry Recipe

I want to bake something tonight, and I have a container of strawberries on their last leg, so I'd like to use them up.

I'm thinking Strawberry Nutella Muffins...but I am not 100% sold on it. 

Have any ideas?

  • I have a strawberry pie recipe in my blog but it may be no good for you since it requires gelatin or surejell (not sure if you have that on hand)
  • DH bought an entire flat of strawberries on Friday so I've been having this issue also.  i found that strawberry banana bread is really good.  Also, I have sweet biscuits in my blog that take 20 minutes and make really awesome strawberry shortcakes.

  • Yep I do!  This is the one I used this weekend:

     

    Strawberry Banana Bread (adapted from Joy of Baking)

    1 stick butter, melted

    2 eggs, beaten

    1 t. vanilla

    2 bananas, mashed

    1/3 c. low fat vanilla yogurt

    1 c. strawberries, cut into bite sized pieces

    2 1/4 c. flour

    3/4 c. brown sugar

    1 1/2 t. baking powder

    1/2 t. baking soda

    1 t. cinnamon

    1/2 t. salt

    1.  Preheat the oven to 350 degrees.  Spray a loaf pan with cooking spray and set aside.

    2.  In a large bowl combine the melted butter and brown sugar.  Add in the eggs and mix well to combine.  Stir in the vanilla.

    3.  Combine the mashed bananas with the yogurt.  Stir the yogurt mixture into the melted butter mixture.  

    4.  In another large bowl combine the flour, baking powder, baking soda, cinnamon, and salt.  

    5.  Add the flour mixture to the wet ingredients and mix well.  

    6.  Gently fold in the strawberries.  Do not over mix.

    7.  Pour the batter into the loaf pan and bake for 45-50 minutes or until a toothpick entered in the center comes out clean.  Cool on a wire rack.
