I'm trying to think of what we can have for dinner tonight but I'm stumped. I thought we could have baked mac and cheese, but I used up the Cheddar last night for another dish. So I either have to buy more Cheddar on my lunch break, or come up with something else.
Here's what I have in the house. MH will eat anything I make, and we don't have kids. Can you think of anything?
Starches: bow-tie, orzo, penne, elbows, and I think we have some spaghetti left; white rice; cornmeal/polenta; a couple small potatoes
Vegetables: zucchini, cauliflower, onions, sugar snap peas, Romaine lettuce, mushrooms (all fresh); baby carrots, peas, corn, Brussels sprouts, string beans (frozen)
Etc: mozzarella cheese, eggs, potato bread, can of tuna, white wine, balsamic vinegar, can of white cannellini beans, cream cheese
ETA a few things I forgot we had.

we're having pasta piselli...basically pasta & peas in a tomato sauce, but more soupy...
you have the makings for it...
zucchini & eggs, tuna melts, grilled mozzarella.
You could make a frittata, or egg cake. Just saute up all the veggies you have in some olive oil and then add eggs and bake until set. You could sprinkle some mozz cheese on top and serve with toast. My MIL makes them with zucchini, potato, red peppers, etc. So delicious and really good for breakfast the next day.
Otherwise you could make a cold pasta salad with the tuna and add in some of the fresh veg you have. With some mayo or olive oil and spices.
