DS is usually a pretty good eater, but I believe he's getting a little burned out on his normal breakfast options. I plan on making muffins tonight so he can have a little variety! I am not set on a certain flavor and my pantry is pretty well stocked...so give me your best and favorite muffin recipes! Thanks!

Pumpkin Cream Cheese Muffins
These are my favorite! I really like to use a fresh pie pumpkin....but that only happens like once a year when they are out in fall. I also just use a dash of clove because I really am not a fan of clove.

These went over REALLY well with my kiddos and DS's class...we call them 'grinch' muffins. I wasn't too keen on the texture and plan to add back in just a bit of the 'unhealthy' stuff! and maybe add a little streusel topping.
But they taste good and look fun!

Have you tried different flavors of pancakes? I tried the "cauliflower pancakes" going around on pinterest and my kids goobled them up. The second time I added just a bit of quinoa to them, they did not eat them quite as fast.
or smoothies? you can't even taste fresh spinach in those! And the kids also think it is funny to eat a green smoothie....or a 'black' one (spinach + blueberries makes it really dark).
I am thinking of trying the 'beet cookies' on weelicious.....just haven't gotten around to it yet.
