Baked eggs for bfast sammies - eggbeaters?

Has anyone baked egg beaters for breakfast sandwiches? I tried to microwave then and that didn't turn out well. I just bought a $$ pan from a restaurant store bc I couldn't find a muffin top pan. I want to make sure it'll work before I'm out the money for the pan.

  • Yup! Here's what I've done:

    Preheat oven to 350. Spray 8" square baking dish with nonstick cooking spray. Slice two links of pre-cooked chicken sausage and place them in the dish. Sprinkle 1 cup reduced fat cheese over the sausage, and pour in 1 cup eggbeaters. Bake for 12-15 minutes, or until set. I slice this into 4 squares and refrigerate them, then reheat in the microwave and place on a toasted sandwich thin.

  • I'm not sure what type of pan you have, but I usually scramble 6 eggs, sometimes with some seasoning, then divide them evenly into the 6 wells of my muffin top pan.  Bake for 12 minutes at 325*.

     

    ETA: I bought my muffin top pan off Amazon for like $9, if that.
