Need a great, healthy recipe (no meat)
I'm cooking dinner for my Dad and stepmom tomorrow night (for those of you that read my post, you know he just had a stroke - THANK YOU for all of your kind words)
It's the first Friday of Lent so no meat. And I need it to be healthy and not too high in sodium since his blood pressure is what caused the stroke.
Any great meal ideas? (Also, would love for it to be semi-easy)

This isn't easy, but of you do the food prep before (draining beans, chopping) and put them in bags to throw together it will be.

I just made this last night-it was healthy and quick.
Cheese Tortilini with shrimp and broccoli.
Boil cheese tortilini until ready.
In a pan heat up oil oil and saute garlic, shrimp and broccoli. Add cooked tortilini and mix. You can top with parmesean cheese if you want.
In our family Friday in Lent = Fish so if shrimp is ok this recipe has shrimp though I'm sure you could do it without.
I marinated shrimp in Lemon Juice and White Wine w/ basil and parsley.
I took a baking dish and roasted cherry/grape tomatoes at like 425 in the oven. When those were nice and roasty I added in the shrimp (no liquid) and let that bake.
Meanwhile I made whole wheat spaghetti (I also make it with brown rice pasta when I cook for my sister)
At the end of the baking process I crumble either feta or crumbly ricotta cheese on top (either one works just depends on taste) then mix it in with the pasta.
I'm sure you can do this without the cheese if need be.

This is a go to meatless recipe in my house. I usually serve with brown rice and either some broccoli or a side salad. It's delicious.
