Made a really yummy dinner tonight

From the 17 Day Diet Cookbook It's low carb:

Slice up eggplant and dip slices in whisked egg whites with a little water.  Press into a bowl of fat free parmesean cheese and coat on both sides.  Cook on sprayed baking sheet at 400 for 30 minutes.  Then, create small stacks of eggplant, two slices high.  In between layer marinara sauce and ff mozzarella cheese.  Do the same on top layer.  Bake for 20 minutes at 350.  I used Rao's marinara because it has less than half the carbs as other prepared sauces.

  • W do something very similar but on the grill - peel the eggplant, season with olive oil, salt, and pepper, and grill for like 4 minutes each side, and then stack with alternating layers of cheese and sauce. We do it a lot in the summer and Rob's actually making it tonight.

  • Sounds similar to something I do when I'm behaving :)

    I just got 2 jars of Lidia's sauce in the huge prize pack I got from winning her contest...have yet to try it but I'll break my jarred sauce rule for her.  I'm sure it'll be delicious, just like I bet Rao's is!
  • sounds easy and yummy.  Are you doing the 17 day diet?  Please let me know how you do/feel?  I've heard about it before.

  • I'm on day 2.  I don't feel great, but it's definitely because I ate like such crap before.  My biggest challenges are no coffee (bc I can't have milk), drinking enough water and I feel totally nauseous at the thought of eating anything I'm allowed to eat.  Makes me realize how much of my diet was really junky foods.  I feel like I'm in withdrawal.  I feel similar to how I felt quitting smoking.
