WWYD with a lot of pineapple?
Probably around 3 cups of diced pineapple (fresh) I made for something at work and didn't use even half of it!

I found a recipe for a great spicy pineapple-tomato relish. I've used it on chicken and tilapia.
It's so easy too - season the chicken or fish with a little salt. In a separate bowl mix together the pineapple, tomato (seeded and diced) and a little siracha (chili paste - about a teaspoon). Add more or less depending on how much heat you like. It's definitely got a kick.
