The next couple days are a little weird since I'm waiting on my mouth to heal after wisdom teeth extraction yesterday, and don't really feel like cooking since I can't eat much.
Sa: leftover tomato orzo soup for lunch, leftover chipotle-green chile pot roast over mashed potatoes for dinner (we had it over cheesey polenta the first time)
Su: finish off leftovers for lunch to get the fridge emptied, chorizo, corn, feta and avocado pizza for dinner
M: Athenian shrimp orzo, spinach with roasted red peppers and feta
Tu: rosemary-Sriracha chicken thighs, mashed potatoes, and probably Brussels sprouts
W: making cornflake-choc chip-marshmallow cookies for dinner w/ friends
Th: Italian sausage, mushrooms and peppers on brown rice
F: black bean and sweet potato enchiladas with salsa verde
Sa: pizza night, probably with a variety of toppings to pick from
Sunday: DH's flight doesn't get in until 9pm so he won't be home for dinner. I'll finish up whatever leftovers I have (either chicken noodle soup or red beans and rice)
Monday: mac and cheese, grilled ham steak and asparagus
Tuesday: big salads with grilled chicken
Wednesday: turkey and swiss panini, baked sweet potato fries, roasted broccoli
Thursday-Sunday: DH's team is playing in a tournament in Orlando so I'll be on my own again. I'll get Chipotle once during that time and I've been really craving a deli sub so I might get or make that. And I'll probably go out with friends Friday and/or Saturday.
ETA: I just remember I may have to attend a Higher Ed Partnership Banquet on Wednesday night...hoping the table will be full of potential donors so I won't have to attend but I might.
