Best way to cook asparagus?

I went to market last night and the asparagus was looking super fresh!

So I bought some....How do you prepare you asparagus? Steamed,baked sauteed?

  • Yum! We eat asparagus all the time. My favorite ways in order are: grilled, roasted, sauteed. I only steam if I'm pureeing to add to asparagus risotto for my kids.  Overcooked asparagus is mushy & gross, so I think the other ways prevent that as long as youre careful.

    I always toss w/ olive oil, salt & pepper before any of them (except steaming). I like to add herbs d provence if it is with a steak or something that is not in some 'family' of seasoning/cooking style or sometimes lemon pepper if that works w/ the main dish. 

    But I was just looking in my recipes a few min ago & saw a recipe I marked as being really good & easy, I need to make it again:

    Whisk together 2 tsp dijon, 2 tbsp sherry or red wine vinegar, , 1 tbsp olive oil, salt & pepper.

    heat  1 tbsp olive oil over medium heat. Add asparagus (1 lb, trimmed & cut in 2  inch lengths), season w/ s&p, reduce heat to med-low and cook while stirring til tender, 10-12 min. Should not brown. Drizzle w/ vinaigrette to serve.

  • Roasted, for sure!  Lightly coated with olive oil, salt and pepper and roast on a baking sheet until fork tender.

    My go to veggie roasting temp. is 425. 

    If I'm adding the asparagus to pasta then I just blanch it in the pasta water for a minute or so... not to long, I still want it to have the bright green color and some bite when I blanch it.

     

  • You might already know this but just to make sure, you need to trim the ends off, they are really tough. The best wayt o do it is to hold both ends & bend til it snaps- it will naturally snap where it starts to dry out, vs just using a knife to cut the ends off. Sometimes it feels like you waste a lot but getting a bite of that tough chewy end is gross. I was at a restaurant recently & they had not trimmed them right, I was pretty surprised, it was no good.

    This but I add a sprinkle of Parmesan cheese or lemon juice.  

  • On the grill!

    Drizzle with a bit of garlic infused olive oil, sprinkle with salt and pepper and grill. Delicious.

  • Another vote for roasted!  Then when I take it out of the oven, I squeeze fresh lemon juice over it. Yum.

  • I like to steam it on the stove top, drizzled with olive oil, add halved cherry tomatoes.  When about cooked through add a little parmesan!  Family raved on this at Easter!
  • I love asparagus - just wish my hubby did!!!  When I buy it - I usually prepare it with olive oil, salt, and pepper and drizzle a little balsamic vinegar over it.  Then I roast it in the oven about 20 minutes or until tender.  YUMMY!!!

  • I also love it grilled or roasted. I toss it with olive oil, salt and pepper and then finish with lemon juice after cooking. It's wonderful.
