Jealous of your weather! : ) It's cold and windy here in Boston. Perfect night for red wine braised short ribs, Parmesan Polenta and roasted broccolini with a beautiful bottle of Amarone della Valpolicella. YUMMY!

It's cold in Seattle, so I change the menu around and we're having Chicken Tikka Masala.

I was lucky enough to have dinner sent home with JR from my SIL/BIL. They sent me Chicken and Spanish Rice with Green Beans and Salsichon.

Just a store-bought rotisserie chicken, mashed potatoes, and salad. H is working, then he might have a meeting. Plus, the entire house is torn up while we get new flooring, so the less cooking I do, the better.

We do fun app-type foods for the Oscars. Tonight is chicken parm sliders, baked mozzarella sticks, chips w/ homemade salsa and Queso dip. Yeah, mixed cuisine types a bit, but I'm still excited!

Pasta with meat sauce

It was supposed to be chorizo, corn, feta and avocado pizza, but I didn't get to making pizza dough, my avocado isn't ripe yet, and my mouth still hurts from wisdom tooth extractions.  Intead, I mixed jack cheese into leftover mashed potatoes, and topped them with chorizo, peppers, onions and tomatoes all cooked together, plus a little feta.  It was basically queso fundido mashed potatoes.

I made a few small apps in honor of the oscars -  oven-baked fries, turkey chili, asparagus, and sliders.

We celebrated my Grandmas birthday at my Moms. Cuban sandwiches, chips and cottage cheese. Pineapple Upside down cake for dessert.

We had Chorizo Mac & Cheese with Crispy Panko Topping (minus the chorizo - we were in a classic mac 'n cheese mood). Also, some grilled buffalo-chicken sausages and asparagus.
