Is this the recipe you use for you sweet potato and black bean burritos? I am thinking about them for my book club. Do you think they would be good as enchiladas with green sauce and a little cheese?

This is the recipe I use. I think they'd be lovely as enchiladas, and I always add cheddar or jack cheese.
I mash some of the potatoes but generally keep it chunky. If I did them as enchiladas I'd smooth out the texture a little more.
