Healthy Chicken nugget recipes that will fool the kids?

Hi-

We tried making our own chicken fingers with organic chicken and italian breadcrumbs and frying them in good oil, but the kids won't eat them, even though they are delicious.  Of course they eat the totally unhealthy Disney Chicken nuggets from Costco.  Help!  Any tricks?  What breading do you use?  Also, recommend your shape cutters if that works as well.  TIA!

  • I made some the other day that my son really likes.  The breading mixture is finely crushed low-fat goldfish crackers, dried basil and pepper.  I just cut up boneless, skinless chicken breasts, dip in skim milk, and then coat in the breading mixture.  Bake at 400 for 10-15 minutes, or until done.  I will say, they don't reheat the best, but they're quick to put together.
  • I dip mine in a mixture of canola oil with a bit of honey mustard and then seasoned crushed Rice Krispies.  They bake for about 15 minutes and then I spritze the top with a misto and broil them for a minute or so.  My 2 year-old loves them, but he's not a picky eater.
  • This is a great recipe for baking the chicken tenders but still getting a crispy texture. They are very juicy and mild which appeals to even finicky kids. The dipping sauce is also mild and healthy. I use this all the time. My sister uses it on fish, too.

    Also - by way of tricks, I find that putting something on a stick (like a skeware) really makes most foods kid-friendly. A chicken nugget on a stick has a whole new appeal for little kids. Go crazy and alternate with cheese, pineapples or even grape tomatoes.
