So I would say Im an average cook, I usually follow recipes to the T so I don't screw them up. Tonight the hubby was working, and I was hungry but not in the mood for anything. I grabbed some readily available ingredients in the kitchen and randomly whipped up this little dish! It turned out great! And its perfect for one person:)

Tangy Balsamic Chicken Breast Salad
This tender, tangy chicken dish is perfect for one person, or more if desired!
Ingredients:
Baby Spinach
Boneless Chicken Breast
Feta Cheese Crumbles
Red Pepper Flakes
Lime juice
Sliced mushrooms
Black olives
Chopped Green Onion
Publix Tangy Balsamic Vinaigrette Dressing
Salt
Pepper
Optional:
Fresh Grape Tomatoes
Chicken:
Heat pan to medium heat
Add enough olive oil to coat the pan
Place chicken breast in center of pan
Squeeze lemon juice on and around the chicken breast
Sprinkle chicken breast with green onion (amount is up to you)
Cook until underside has turned white and starting to brown
Remove breast with tongs, add more olive oil to coat the pan
Flip chicken and return to pan
Squeeze more lime juice on and around the breast
Cook until breast starts to brown underneath
Flip chicken breast again
Add mushroom slices to pan around chicken to cook in juices
Sprinkle chicken and mushrooms lightly with red pepper flakes
Sprinkle lightly with salt and ground pepper
Turn chicken breast once more to ensure thorough cooking
Flip mushrooms until lightly cooked, remove and add to salad
Remove Chicken and slice long ways, add to salad
Salad (while chicken is cooking):
Cover plate with fresh spinach leaves
Sprinkle with crumbled feta cheese
Add black olives, tomatoes, and mushrooms
Add sliced chicken
Drizzle with Tangy Balsamic Vinaigrette Dressing
