What to take to eat on ski trip?

Every year my family takes a ski trip and we rent a house and take turns making dinner.  We leave this week and I have no idea what to make for my night.

My mom is doing chili and my SIL is doing some sort of baked pasta and salad.

Any good ideas?  I'd like it to be fairly easy to transport and if possible, I'd love to do some of the prep work before we leave.  I was thinking maybe tacos, but wasn't sure.

Bonus points if it's kid friendly!

  • I would do some sort of a strata (savory bread pudding). You could make several pans of it at home, chill or freeze it, and transport it easily to bake when you get there. Or maybe a quiche? Something along those lines is what I would do... easy to feed a crowd and kid-friendly.
  • How about crockpot salsa chicken or pulled pork and salad?
  • I've done green chili tacos for ski trips. It's one of my favorite meals, is easy, healthy and can be adjusted to feed large groups.

    Green Chili Chicken Tacos

    2 chicken breast,

    1 can of mild green chilis, (

    1 Tablespoon of Olive Oil,

    1 Tablespoon of Mrs. Dash.

    Throw it all in a crock pot and cook on high for 4 hours, or on low for 8. Once chicken is cooked, shred with 2 forks and return to crockpot and mix everything together.

    I serve with a good quality whole wheat tortillas, grape tomatos, chopped red onion, avacado, sour cream, cheese and salsa.
