really into spinach lately!
lately I have been getting the huge bin from Costco and using it everywhere! And getting the kids to eat it! muffins, smoothies, salads, eggs, wraps/sandwiches, plain wilted, pasta/lasanga dishes.....
what else can I do with it?

After 2 years of IF workups/treatments and 2 IUIs, we have closed the door on fertility treatments.
We are very excited to be pursuing international adoption from China!

Sounds awesome. I go through a tub like that every week, too.
Some (useful/useless) information - I discovered that if I have spinach that I might not get around to using, I put 3oz of the fresh spinach into a baggie and freeze it, just like that. And it works perfectly in smoothies and cooking.
Also, now that you are into the greens, you might want to branch out, so to speak, to other greens. I've discovered kale, red kale, and red swiss chard. I know there are more, but that's where I am now. You can do the same with them as with spinach.

I have no suggestions but this is awesome and encouraging! I love spinach salads but that is about it!
My kids won't eat it as a salad so I should try some other ways to use it.
