zucchini recipe needed

I have a pound of zucchini that I want to use but I need something other than my normal recipe (Penne with Zucchini Pistou). I'm looking for something vegetarian and without pasta, other than that I'm open to anything.

You could make a variation of these Chorizo-Rice Stuffed Zucchini Boats with Queso Fresco with soy chorizo, or sub chickpeas or black beans saut?ed with spices. We loved this meal.

I'd do faux "crab" cakes (I think someone posted the recipe above.)  It's a great way to use a zuke, and they freeze beautifully.  I love to grab them from the freezer for a quick weekend lunch.

I like to cook it like I do fried tomatoes, egg wash, flour (w/salt & pepper)

fry in some olive oil till crispy. Yum
